Zoe got her start in coffee in 2013 as a barista in a fast-paced college town cafe. Her introduction to roasting didn't happen until she moved to New Orleans and started working at Congregation, where she quickly transitioned from barista to roasting assistant and eventually to head roaster and green coffee buyer. She's been roasting all the coffee at Congregation since 2019 and currently also works as a roasting assistant at Applied Arts Coffee.
