Ellie Jones
Ellie is an Australian hospitality professional based in New York City, with over a decade of experience in the specialty coffee and hospitality industry. She began her career in 2011, working across Australian coastal cafes before relocating to London in 2014 to join Taylor St Baristas, where she played a key role in opening their St Paul’s location.
In 2016, Ellie moved to New York to assist with the launch of Taylor St’s first U.S. cafe. The following year, she advanced to the role of Manager and Lead Roaster at Café Integral in SoHo, overseeing operations and coffee programs.
After a brief return to Australia, Ellie came back to New York to support the opening and management of Hutch and Waldo’s second location in Gramercy Park. Since then, she has transitioned into an operations-focused role and currently serves as Food and Beverage Director across three cafe locations. In this position, she oversees systems and logistics while championing Australian standards of quality and service within the New York coffee scene.
