For over fifteen years, Katie Prinsen has been immersed in Portland’s specialty coffee culture. With a genuine passion for coffee and hospitality, she built her foundation working across a variety of roles before opening a café of her own—a long-held ambition brought to life through dedication and depth of experience.

In the years since, Katie has developed a clear and practiced understanding of what it takes to lead successful, high-volume cafés—spaces that are not only efficient, but deeply considered. Through building intentional, service-oriented teams, she’s cultivated environments where quality and pace coexist, and where each guest experience feels both curated and personal.
