Trevor Jermasek
Trevor brings a rare combination of hands-on roasting expertise and practical green buying from his 12 years in the specialty coffee industry. As Director of Roasting at Tailwind Collaborative in Chicago, he has worked closely with a wide range of coffees, developing profiles across different origins, processing methods, and customer needs, while also helping other roasters refine their approach. His involvement in sourcing decisions, quality evaluation, and production scaling gives him a well-rounded perspective on how green coffee choices translate into roast development and final cup quality. Combined with his day-to-day work supporting a diverse roasting community, Trevor offers both technical knowledge and real-world insight.
