Zoe Gigas is a coffee professional with over ten years of experience across production, roasting, green coffee buying, and quality control. Her career has focused on building thoughtful roasting and production systems at multiple scales, with an emphasis on quality, operational clarity, and long-term impact.

As Head Roaster at Bellwether Coffee, Zoe works closely with customers of all backgrounds as they integrate fully electric, ventless roasting into their businesses. With a background in traditional roasting on gas machines—including Diedrich, Gothot, Probat, and Loring—she brings deep technical expertise to the transition toward fully electric roasting. Through this work, she helps teams bring roasting in-house in a way that enhances control over the finished product, cuts emissions across multiple areas of the supply chain, simplifies operations, and reduces the overall environmental footprint. Her approach to sustainability centers on the idea that small, intentional changes often create meaningful impact.
