NEW – Micro Lot Cupping Workshops for Retailers and for Roasters:
In specialty coffee we speak of the ‘Quality Pyramid’; as the quality goes up, production is less, making up the top tier of the pyramid. These are the Micro Lots of coffee: coffees with unique character and a higher quality than the rest of the surrounding crop. In the Roasters cupping workshop will we discuss the farming, processing, selection and marketing of small select lots of the most special of specialty coffees. We will discuss terminology and taste the distinct differences in a unique cupping of 6 coffees from the same region but different plots of land and different hands. Knowing "How-to Cup" is beneficial for this workshop.
In the Retailers Micro Lot workshop we will discuss terminology and taste the distinct differences in a unique tasting of 6-10 coffees from the same geographic region but from different, well-defined plots of land. This class includes an open discussion of how to get consumers interested in, and buying these unique coffees.
NEW – Single-Cup Brewing and Extraction Workshop:
This workshop, geared toward the intermediate specialty coffee retailer, explores the complicated world of extraction and a variety of single-cup brew methodologies, because before one can truly understand and appreciate the incredible range of single-cup brew methodologies they must first understand the basics of extraction. The first 90 minutes of the workshop is spent examining how the parameters of dose, grind, temperature, water, roast, turbulence, bean freshness, and brew freshness directly impact the extraction and, subsequently the taste of coffee. Everyone will be hands-on with the brewing (extraction) process and we will change one parameter at a time to understand the influences that parameter has on extraction. Once there is a basic knowledge of extraction, the second 90 minutes of the workshop will examine the hottest segment of the specialty coffee industry: Single-Cup Brewing. Each participant in the workshop will get hands-on experience with the following single-cup brew methods: pour-over, steep and release, siphon, press pot and more. Throughout the workshop, we will be utilizing tools to measure the extraction levels of each brew, so that we can generate some consensus on the optimal extraction level for great tasting coffee.
